Yet, the allure of French cuisine led him to Tokyo, where he apprenticed under a mentor with French culinary roots. Determined to expand his expertise in various cuisines, Chef Yoshida immersed himself in the dynamic culinary scene of Osaka, spending five years in French and Italian restaurants. His progression from sous chef to head chef marked a pivotal phase in his career.
However, it was his adventures and experiences in local eateries across France that truly enriched his culinary repertoire. Here, he cultivated an appreciation for diverse ingredients and culinary traditions, capturing the essence of both France and Italy. Driven by his passion for exploration and food, Chef Yoshida embarked on a culinary odyssey, savoring the distinctive flavors of numerous nations and regions. His approach reflects an unwavering respect for ingredients and traditions unique to each locality.
In 2017, he joined The St. Regis Osaka at the French restaurant "Rue d'Or." By 2020, he embraced a new challenge at "La Veduta," the hotel's signature fine dining restaurant, where he assumed the role of head chef in 2022. In Chef Yoshida's hands, the culinary canvas transforms into a symphony of flavors, elegantly orchestrated with a diverse array of ingredients. He proudly infuses seasonal Japanese ingredients, carefully selected for their quality, delivering an exquisite dining experience.
